What data a PDF usually carries
Without showing on the pages, a PDF often stores the author's name, the software it was made with, the creation and modification dates and, sometimes, the original title or keywords. When you share it, that data travels with it.
Removing it is useful before publishing a document or sending it outside your organisation, for example so it doesn't reveal who wrote it or with which tool.
What stays and what doesn't
The document's information card is emptied and the XMP block is deleted. The metadata of embedded images, such as the EXIF of a photo, which can include a date or a location, is not touched, and neither is the content of the pages.
