What metadata is for
Metadata is the document's information card. PDF readers show the title in the tab or window bar, and search engines and document managers use the author, subject and keywords to classify it.
A proper title improves accessibility and makes the file easier to identify when it's shared or indexed.
What changes in the file
Fields you leave empty are removed from the PDF, and the last-modified date is updated. If the file carried XMP metadata, it is dropped so it doesn't contradict the new values: viewers often give XMP priority.
The content of the pages isn't touched. If what you want is to wipe all the hidden data, use Remove PDF metadata.
